Lemon Squares

Crust:

  • 3/4 cup flour

  • 1/4 cup icing sugar

  • 2 tsp lemon zest

  • 6 TBSP cold butter

Filling

  • 2 eggs

  • 1 cup sugar

  • 3 TBSP lemon juice

  • 2 TBSP flour

  • 2 tsp lemon zest

  • 1/2 tsp baking powder

Topping

  • 1 cup sour cream

  • 3 TBSP sugar

  • 1/2 tsp vanilla

Mix crust ingredients together - hands work best! Place in 9X9 greased pan and bake at 350 for 10 minutes.

Beat together filling ingredients and pour over hot crust. Bake 350 for 12 - 14 minutes, until set.

Combine topping ingredients and pour over filling. Bake 6 - 8 minutes longer.

Chill and sift icing sugar over the top before serving. Melt in your mouth bars!
