Its back to school time and we’ve created the perfect cupcake that will bring a smile to any child! These cupcakes are so moist and easy to make. We colored the batter in 3 colors to make them more exciting for when the kids bite into them. Then we colored the frosting in 3 colors to match. Put all 3 colors of frosting into a piping bag and swirl away! Finally, we topped them with a few sprinkles. These cupcakes will be a hit at any party!
1 cup sugar
1 tsp vanilla
1 cup flour
1 tsp baking powder
1/2 tsp salt
1/2 cup milk
2 tbsp margarine
Preheat oven to 350 degrees. Beat eggs in bowl until frothy. Add sugar and beat until thick. Add vanilla.
Mix in flour, baking powder and salt until just mixed.
In microwave, heat milk and margarine until melted and hot. 1 - 1 1/2 minutes. Mix into batter. Batter will be runny but that’s what makes it so moist!
Divide batter into 3 bowls. Use 3 colors of food coloring. We used blue, pink and yellow.
Grease 12 muffins liners. Pour first color evenly into muffin liners. Add second color and then the third.
Bake for 15 - 17 minutes or until toothpick comes out clean. Cool and frost.
4 cup icing sugar
1/2 cup margarine, softened
4 -6 tbsp milk
2 tsp vanilla
Beat all ingredients together until smooth. Divide into 3 bowls. Add a different color of food coloring into each bowl. Mix each one well. Put all 3 colors into a pipping bag with tip of choice. Frost cupcakes and sprinkle with sprinkles. These delicious cupcakes won’t last long!
